SorbX™ is a concentrated, food-grade surface treatment formulated to help inhibit unwanted mold growth on the exterior of dry-cured meat products. Developed specifically for artisan charcuterie makers and commercial meat processors, SorbX™ provides an easy-to-apply, ready-to-use solution that forms a thin protective barrier against undesirable surface molds while preserving the appearance and integrity of your product.
Potassium sorbate serves as the primary active ingredient, helping inhibit the growth of molds and yeasts on treated surfaces. Sodium acetate complements the formulation by creating conditions that enhance sorbate performance while contributing additional antimicrobial activity. Food-grade ethanol promotes rapid drying and improved surface wetting, allowing the active ingredients to be deposited as a thin, uniform coating.
Unlike bulky pre-mixed solutions, SorbX™ ships as a concentrated dry active blend. Simply add the included food-grade ethanol, top with distilled water, shake, and it's ready to use in minutes.
A fine mist is all that's required. The solution dries quickly, leaving a uniform coating without excessive moisture or dripping.

Directions
- Add the included bottle of food-grade ethanol.
- Fill with distilled water to the 4 fl oz (118 mL) mark.
- Shake until fully dissolved.
- Apply a light, even mist to the product surface.
- Allow the treated surface to dry before packaging or further processing.

Typical Coverage: One bottle will treat 200–400 average salami or approximately 100–150 square feet of product surface.
