This seasoning blend is a gem of the Pantry's new line of spices! We carefully formulated this recipe not only using a baseline of high-quality spices, such as, White Pepper, Coriander, Mace, Garlic, and Onion, but also the incorporation of natural flavors of complimenting spices in the form of extracts. Spice Oleoresins are natural combinations of resins and oils of spices that are extracted. They are the concentrated, pure flavor of any given spice.

We fortify our Hot Dogs / Franks / Wieners Seasoning with these natural flavors, 1) for increased flavor, and 2) for the cleaner looking emulsion leaving less speckles of spices in the final product. The combination of both fresh spices fortified with their own flavor extracts is what distinguishes our product and flavor. Many franks that you see in market contain Hydrolyzed Soy Protein to add savory flavor and umami. Being a soy-based product, this now makes the blend allergenic. We include Yeast Extract in our seasoning blend, which naturally adds savory and umami perception without the use of an allergen.

Usage: 3.22% of the green weight of the meat block used.

Must Add (based on the meat block weight):

  • 20.00% Water

Curing Salt

  • 0.25% Cure #1 (6.25% Sodium Nitrite)
  • or (FOR UNCURED VERSIONS) use 0.52% Veg-Cure 508 30k Celery Powder

Cure Accelerator / Antioxidants

  • 0.05% Sodium Erythorbate
  • or (FOR UNCURED VERSIONS) use 0.15% Veg-Cure Cherry 34 powder

You may also choose to add, but not required:

  • 0.50% Sodium Phosphate (for added water retention)
  • Up to 1.00% of Binder (such as carrot fiber or pea fiber - preferably something that is not an allergen)
