4.16% of the green weight of the meat block used.
Must Add (based on the meat block weight):
3.00% Whole Milk (if you are keeping the sausage raw - USDA limits 3% ingoing liquid)
We recommend smoking and fully cooking this recipe.
The USDA allows more liquid to be added to cooked products, due to cooking loss.
Add up to 10% liquid to this recipe with no alteration to the recipe, if you intend to fully cook.
Generally speaking, smoking and fully cooking causes a 10% loss, so your sausage will come back to green weight.
