SafePro® B-SF-43 is a protective meat culture containing Leuconostoc carnosum, commonly used in cold-stored, ready-to-eat meat products packed under vacuum or modified atmosphere packaging.
B-SF-43 works through bioprotection: it introduces a selected strain of Leuconostoc carnosum that is well-suited to chilled, vacuum-packed, and modified-atmosphere meat environments. Once evenly distributed in the product, the culture helps establish a favorable microbial ecosystem that can compete with unwanted organisms and help control the growth of Listeria monocytogenes during refrigerated shelf life. Because Leuconostoc carnosum can remain active under low-oxygen packaging conditions and cold storage temperatures, it is especially useful in ready-to-eat meat products where safety, shelf life, and clean flavor are all important. Unlike aggressive fermentation cultures, B-SF-43 is not intended to create a sharp acid drop; it is used as a protective culture to support microbial stability while helping preserve the product’s intended sensory profile.
To reduce acidification, lactose is recommended when formulating with this culture.
Use rate: Sold by the pack. Use one 25 g pack per 100 kg (220 lb) of meat mixture. Add it early in the process—during grinding, cutting, or blending—along with your other dry ingredients for even distribution. For improved distribution, the culture may also be dispersed in water before being added to the meat.
Storage & shelf life
Store frozen below 1°F / -17°C for at least 18 months.
If kept around 41°F / 5°C, shelf life is up to ~6 weeks.
Keep dry and store according to manufacturer recommendations.
