Harvested by hand in Italy, fennel pollen is one of the most prized seasonings in traditional Tuscan charcuterie. Often called the "spice of angels," it delivers an intensely aromatic flavor with notes of sweet anise, citrus, wild herbs, and fresh fennel that cannot be replicated by fennel seed alone.
Fennel pollen is the defining ingredient in the famous Tuscan salami Finocchiona, a centuries-old specialty named after the fennel plant itself. The delicate flowers are carefully collected and naturally dried to preserve their essential oils and complex aroma before being sifted and cleaned to produce a vibrant golden-green pollen with exceptional flavor intensity.
A little goes a long way. Because of its concentrated aroma, fennel pollen is typically used at very low levels in sausage and charcuterie production. Traditional Italian formulations generally limit total fennel ingredients to no more than 0.5% of the meat weight.
For authentic Finocchiona-style salami, we recommend:
