These are beef rounds that have been cut to 17in. in length, and tied on one end with string. They fill to a diameter of 1.5-1.75in, and once filled they are secured with the tied string, and fill to stuff about 12 oz. of meat paste. They fill in the shape shown, like a ring or horse shoe. This is the perfect size for Salsiccia Calabrese, Chorizo, Stronghino di Culatello, or even Ring Bologna. It truly works nicely, and saves so much time being cut to the proper length and tied already.
