The best summer sausage base flavor profile, to date! Flavored with Whole Mustard Seeds, White Pepper, Coriander, Garlic, and a touch of complimenting Warming Spices. Yeast Extract is added as a natural, savory flavor enhancer. We use only the best, highest quality ingredients! This is an excellent recipe on its own, but we also encourage using it as a base for additional inclusions, such as Jalapeno & Cheddar Cheese! You can get creative with various summer sausage flavors all by only changing the inclusions.

5.78% of the green weight of the meat block used.
Must Add (based on the meat block weight):
10.00% Water, or Beer (something flavorful)

This recipe was formulated to ferment your summer sausage with lactic acid starter culture.
The fermentable sugar content of this seasoning blend will allow the fermentation pH down to at least 4.6-4.8.
We recommend F-RM-52 or similar culture.
We recommend smoking and fully cooking this recipe.
