These are much smaller than the Hog Middle Caps we sell, and are tied on the top with twine. They average about 10 in. in length, and when filled its diameter is about 2.75 in. These are also known as “Crespone” in Italian recipes, and is used to make products like ‘Nduja; Soppressata di Calabria; Crespone and much more.
These casings are VERY delicate, and can break easily. It is a known fact with these, and one must be very careful when stuffing not to overstuff. Bursting happens to everyone, even professionals, so it is good to buy enough taking into account a rough 15-20% breakage. Be mindful, and have finesse when using hog middles!
