One 100g bag of Savini Tartufi Black Truffle Sea Salt will season 10# of meat if used at a percentage of 2.5%.
The actual quantity of meat this bag will season at 2.5% is 8.8# of meat (making your in-going salt percentage 2.20%), BUT most use curing salt at 0.25%.
This addition of curing salt will increase your salt percentage to equal about 2.5% since generally 90% of curing salt is…salt. If you follow this you will end up with a perfectly seasoned truffle salame.
