Potassium Sorbate is used in industry as a mold and yeast inhibitor. If you are unsure if the wild molds in your chamber are safe and wish to do what you can to get rid of them, than this is the product you need. It is also used in spray form to coat beef jerky or similar products before packaging to prevent wild molds from growing on the surface. It is a great product for whole muscles that are not cased in any protective natural casing. With whole, uncased muscles wild molds can grow directly on the meat, which can be undesirable. Something to remember… Potassium Sorbate cannot tell the difference between “good” mold and “bad” mold. It will prevent the growth of ALL mold, so make sure you know going into using this ingredient that it can and will prevent Mold-600 from growing.
This is why it is a good idea to only use this ingredient when “bad” molds or unwanted molds begin to form.
Mixed in with meat (sausage) – 0.025% by weight of meat
Beef Jerky or similar – 0.10% spray
Whole Muscle – 25g per 250g purified water
Stronger, most effective – 50g per 250g purified water
Before saturating surface with solution, brush or scrape as much of the unwanted mold off the surface of the meat or casing.
