The end cap of the Hog Middle. Known as “Orba” in Italian recipes, and is used to make products like ‘Nduja, and more. This casing filled weighs between 5-12#, and it’s dimensions are roughly 2.75 x 4 x 7. Sometimes they are bigger!
Pictured to the left is a pressed piece of Soppressata Calabrese, and to the right is an Nduja in Orba. You can see the versatility of the casing, and unique look it offers for these different styles.

Good sized. Like most cecum/orba they can be a bit delicate, take care rinsing and stuffing. Getting a small hole is pretty common and easily dealt with. Like all their casings, very well packaged.
